We’ve all reveled in one of those little moments of pure vanity, where we indulge in scrutinizing and studying ourselves with relish. Like Narcissus subjugated by his reflection in the water, we are fascinated by the shiny dark chocolate icing in which our own image is reflected, darkened by a mysterious veil. Our face is printed on the somber and intriguing glaze which coats the flagship dessert of the Mandarin Oriental in Paris: we stare at it and it stares back at us. Oh! What little resistance we put up when stung by the sharp needle of desire. Looking only lasts so long – it’s now time to touch. Let us taste this dessert, soberly names the Mandarin. [Los Angeles] Chapter 1 : Departure / Oh-Oh by Bouchon Bakery

Setting off on an adventure with no luggage, disappearing without a sound, to escape the present at all costs, and – having found appeasement at last – smiling from afar at those who populated our past, while watching this world disappear in mist, as we pull further and further away from the shore. Is another world, another life, possible? It is the desire for change, the yearning to start a blank page and – yes – to believe that one’s dreams can still come true, which are at the source of all true voyages. Let us escape to the other side of the globe, under the Californian sun, to Los Angeles. Allow ourselves to be surprised by new discoveries, welcoming everything we come across with an exclamation on our lips. Chocolate Cake by Muscade

It is often when least expected that some of the encounters which turn one’s existence upside down occur. How mysterious it is to feel oneself inextricably subjugated by an unknown person, catching sight of her amongst the crowd, eyeing her slowly up and down, observing her moves, gazing boldly at her hands, her clothes, her neck, her lips… Until the moment – simultaneously feared and eagerly awaited – when our eyes meet each other and lock gaze, setting fire to the blood in our veins. We are rarely foolish enough to pass up the opportunity of a new encounter, in whatever shape or form. Particularly when it comes to a face to face meeting with a new pastry, a curious Chocolate Cake which caught our attention in the pastry shop Muscade, nested in the arcades of the Palais Royal in Paris.   Continue reading “Chocolate Cake by Muscade”

Dark Chocolate Ganache Tart by Christian Constant

We find them everywhere yet we are not fond of them all. Rich chocolate tarts are amongst those pastries which can be enjoyed all year round; but to be good, they require excellent raw materials, a conception focused on bringing out the chocolate’s character, and an elegant touch. Jonathan Blot’s excellent chocolate tart passed Cake Justice’s test with flying colours. Let us see now how one of its famous sisters – Christian Constant’s Melting Dark Chocolate Tart – is faring.
