The Mandarin by The Mandarin Oriental

We’ve all reveled in one of those little moments of pure vanity, where we indulge in scrutinizing and studying ourselves with relish. Like Narcissus subjugated by his reflection in the water, we are fascinated by the shiny dark chocolate icing in which our own image is reflected, darkened by a mysterious veil. Our face is printed on the somber and intriguing glaze which coats the flagship dessert of the Mandarin Oriental in Paris: we stare at it and it stares back at us. Oh! What little resistance we put up when stung by the sharp needle of desire. Looking only lasts so long – it’s now time to touch. Let us taste this dessert, soberly names the Mandarin. Some journeys are essential; they must be made. We leave and come back not quite the same. As if our lives had seamlessly deviated from the original path ahead. Though this change might be imperceptible when it happens, it nevertheless transforms the future. As L.A. starts to fade into the past, only images and memories remain, moments which are no more but whose trace we will forever carry. We chose one last comforting flavor before departure, considered a childhood treat for many: a Fraisier by Chaumont Bakery. [Los Angeles] Chapter 2 : The City / Raspberry Cloud Cake by Bo Nuage

Stepping out of the LA airport, the city instantly takes hold of us and draws us into its tumult. The thermometer goes up, the air is heavy, the asphalt is getting hot. We get on the road and the traffic gets heavier, the streets swarm with people, police sirens screech, everything blends in the uproar rising from the city. Buildings reach higher and higher towards the sky, towers rise next to each other, projecting a power which arrogantly tramples the squalor found below on the sidewalks. Amidst this agitation, we long for lightness and gentleness, and it is for West Hollywood that we set out. We go up Melrose Avenue to taste one of those airy desserts which we are well acquainted with back in Paris. Here they call it a Cloud Cake, and it is a specialty of the Bo Nuage pastry shop. Le Gentleman by Romain Lièvre

The world is filled with vastly different people, and life teaches the most lucid among us that true honesty, and consequently courage, are rare and precious qualities. Beneath a gentleman’s hat all sorts of faces can be found. Let us never forget that such hats have been worn by illustrious men, but have also been found on the head of the vilest of characters. Can anyone honestly claim to know the hidden intentions of those one finds on one’s path? And so it is: appearances offer no guarantee… but taste does!
