We all have fond memories of biology class – the drosophila, the xenops, the chicken embryos, the sheep hearts, the rabbits and other joyful creatures which we explored. But the dissection of the mouse is perhaps the exercise which leaves the biggest mark in our memories: occurring early on in the path of learning, it allowed us to practice the care and dexterity required for such an activity. Let us take up our dissection instruments again, and turn our attention to another type of mouse: the one currently on offer at the pastry shop-cum-bookshop Une Souris et des Hommes.

Apple and Hazelnut Tart by Méert

What we like in very thin tarts is the idea of going straight to the point. No fuss allowed in these little gems: just a golden puff pastry supporting a bounty of fresh fruits bursting with flavor – that’s how we like them. At Méert, however, they brings a touch of sophistication to this dessert, with the addition of hazelnut and cinnamon. Will their endeavor fall into excess, or will they show an elegant restraint? Isabella by Gâteaux Thoumieux

At the Thoumieux pastry shop, we of course find the Choux Choux, the shop’s signature dessert, but we also find an abundant and varied offering of pastries designed by the chefs Jean-François Piège and Ludovic Chaussard. Amongst all these sweet temptations, it is the Isabella which we took in for close examination. Let us see if its round, plump shapes indeed translate into an irresistible voluptuousness. [Gluten Free] Chocolate, Hazelnut and Orange Pound Cake by Nicolas Bernardé

Nicolas Bernardé, who holds the prestigious title of Meilleur Ouvrier de France for pastry making,  has made the pound cake his trademark product. These cakes are offered in various flavors and colours in his boutique in La Garenne-Colombes. That is where we went to acquire one of these pound cakes, for which we prefer the name “travellers’ cake”, in a gluten-free, chocolate, hazelnut and orange flavored version. Hazelnut Cream Galette by Poilâne

For the past 15 years, the Poilâne bakery has been offering a Galette des Rois (or “King’s Cake”) filled with hazelnut cream, departing from the conventional galettes filled with marzipan or almond cream. Cake Justice, always curious when it comes to the out of the ordinary, went to acquire one. But rest easy, the lure of originality will not distract him from a rigorous analysis of the fundamental characteristics of any flaky pastry galette, regardless of its filling.
