[Los Angeles] Chapter 5 : Hallucinations / Religieuses by The Sweet Nuns

It’s almost unnoticeable, barely a little stroke of the tongue. Light as a feather, this little candy which we swallow, eyes closed, nevertheless takes us to a parallel world. It goes to our brain, makes us dizzy. Here in L.A., should one simply go along with the flow, and free oneself of the constraints of the real world? We hang on to our dreams and loose our footing, we leave surrounded by bursts of laughter, which echo in our ears like reminiscences from the past. Mirages, hallucinations pound our head like projectiles. We lose the sense of our own materialness, and a sudden feeling of exhilaration comes over us: the mysterious sensation of having communed – a religious emotion which gives rise to an insatiable appetite, which only the most spiritual treat can quench. There is only one thing to do: make our way to Sweet Nuns in Faircrest Heights, where we will kidnap four religieuses (French for nuns). The curtain veils ripple like a ghostly appearance in front of the window, rays of dying sunlight piercing through them and scattering throughout our hotel room, like white dust hanging mid-air. We are foreigners on this west coast, where time and space seem to expand with simultaneous gentleness and violence; jetlag casts its shadow on our dark-rimmed eyes. Our thoughts awake us just as we think we are sleeping; melancholy overwhelms us. Illuminated by the backlight streaming in from the veiled window, a silhouette advances slowly upon us, beautiful and mysterious, awakening in us emotions which had long been slumbering. Is the city of angels also the city of love? To find out, it is this Saint Amour which we invoke – or rather purchase – at Bottega Louie, the renowned pastry shop in L.A.’s financial district. If Paris is a city known for its constant strive for excellence in style, London sometimes comes off as its less conventional and more daring sister. Thus, we do find canelés in London, sold by Babelle in the famous department store Selfridges on Oxford Street; yet they differ from those previously auditioned at Baillardran and Lemoine by the wider variety of flavors on offer than what is found in these two traditional Bordeaux pastry shops. Does this greater range come at the price of lower quality, or do these canelés have what it takes to make their French counterparts blush? We investigate.
